Funny Story
Okay a pretty funny thing happened today, but before I share it you all have to promise not to judge me. I went to a garage sale today and I wasn't sure how much stuff they would have so I just left Kacen sleeping the in the car. But they had a lot of great stuff to look at so I went and got Kacen and set him in a corner in their garage. I found lots of great baby clothes and paid the lady for them then I started to leave. Yep I just started to leave without my baby. The husband said, "ummm don't forget your baby." Haha. I was so embarrassed my face turned bright red and I went to get him, they probably thought I was the worse mom ever. You would have thought that after 3 months I could remember I had a baby when I went out. But in my defense I was buying clothes for him, so I didn't forget that I had a baby just that he was with me in the garage not in the car. Well I hope you all enjoyed that funny story.
So I guess Kacen laughed at Kyle but I wasn't here to see it so I really hope he does it again soon.

Pictures and Pie
Really easy double pie crust:
2 cups all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
2/3 C. shortening
5 to 6 Tbsp. cold water
In a large bowl, combine four, baking powder, and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball.
This makes one bottom crust and enough dough for a lattice top, which is what I made but I had left overs so I am sure you could actually make a full top if you want. It was really easy and really forgiving.
For a full pie brush the top with milk and sprinkle with sugar. Cover edges loosely with foil. Bake at 400 degrees for 15 minutes. Reduce heat to 350 bake 40-50 minutes longer or until crust is golden brown and filling is bubbly.

Baby Wise
I just wanted to quickly say that I am a believer in the book "On Becoming Baby Wise." I have really tried to implement the tactics they use in that book to get your baby sleeping through the night at an early age and it works. Kacen is only 10 weeks now and he sleeps at least 6 hours every night (which he was doing by 6 weeks) and sometimes even 9. So for all of you moms or expectant mothers read this book and do what it says it really worked for us. Sorry I have been lazy about getting pictures up, I will do that soon plus I have a really great pie crust to share, I made my first apple pie on Monday and it turned out great I used apples I got from my bountiful basket. We got a lot of great produce and I think we will eat most of it, but it had Swiss Chard and that was sick. Well look for pictures coming soon.

Time to Brag
Sorry I just have to take a quick second to brag about my husband. Kyle has this week off school and over the weekend and the past couple of days he has been so helpful. I love having him home most of the day. He changes diapers, sat with Kacen for immunizations, does bath time and plays a lot with Kacen, who just loves his dad he will sit and smile at Kyle even if Ky isn't even looking at him. He has also been helping around the house and we have now disassembled our dryer twice to try and fix it. My two guys are just great and Kacen is growing so fast it is scary, just had to rotate out the 0-3 month clothes and bring in the 3-6 mo. he is now 10.5 lbs.

Thai Peanut Lettuce Wraps
This is a really yummy recipe my friend Alisha shared it is great. And here is a little bit of advice from her which I highly recommend: make double because it is so good you will want more!
Ingredients:
1 tbsp extra virgin olive oil
2 boneless, skinless chicken breasts, cut into strips
Salt and ground black pepper
1 red bell pepper, cut into strips
1/4 c. sweet chili sauce
1/4 c. honey
2 handfuls of fresh spinach (this wasn't is optional, it wasn't in the original recipe but it adds a lot of great nutrients and doesn't affect the taste)
1/2 c. honey-roasted peanuts, chopped
Juice of 1 lime
1 handful basil, chopped (I just used 1 tsp dry oregano and Alisha used dry basil)
chopped lettuce
Place in a large skillet over medium-high heat with EVOO, season the chicken with salt and pepper and cook in pan until golden brown on all sides. If there is a lot of water in your pan because chicken was not completely thawed you will want to drain it. Add in the red pepper and spinach and cook until soft, about 3 minutes. Add in the chili sauce and honey and simmer to reduce it and coat the chicken. Add in chopped peanuts, lime juice and basil or oregano. We put the chicken mixture into a tortilla with lots of lettuce and rolled it up. This is so yummy I hope you all like it as much as we do!
If you want a low carb dinner serve it in lettuce leafs.
