All Things Kace, the Park, Watering Hoses, Riding A Bike

Here is the local park we go to. For any die hard John and Kate Plus Eight fans, here is a little tid bit, we live in the town where they used to live. And this is the same park they would take their kids to on the show.
 Kace loves watching the other kids play, and just wants to be friends with everyone, and follows around all the older kids trying to do what they do. This time he was watching them swing.
I was looking through photos and saw this and thought it was funny, the same exact outfit a couple of months earlier, but  now he has a hair cut and the pants are now shorts.
 Finally figured out the water hose
 The first time it was so funny because it took all his little muscles to get it to go, look at his tiny arms work. Then he kept trying to touch the water with one hand and pull the trigger with the other,it was really hard for him, but he finally mastered it.

 Last night we went outside to run off excess evening energy and Kace got his first try on a two-wheeler....and loved it! He just wanted to be wheeled around for like 10  minutes.

What a great daddy, to help him out. I need to get a picture of this but he also loves to ride his skate board, and by ride I mean step on it then jump off or step on one end and do a wheelie then put the other foot down to make flat again.

And you know Ky any activity that can done to the extreme IS.


Other Kacenisms
  • Running
  • Talking really loud, pretty much all day, unless he is watching other children
  • Says "Up" and "Dad" distinctly and "more," "shoes," "breakfast," "Gus," and barks like a dog a little less distincly
  • He goes goes goes...the speaker in church last Sunday got distracted by Kacen and mentioned his energy during his talk...uhhh...I was so embarrassed.
  • He bows his head for dinner prayer but continues to talk wildly through the whole thing
  • Jumps off everything, the bed (it is high), cedar chests, coffee tables, couches, chairs, stairs etc. He really is trying but can't quite figure out the motion from standing to jumping.
Anyway he seems to be doing pretty normal things for a boy his age and we love him to pieces.

Picture Homage to a Fun and Good Dad

Here are some fun pictures of Ky and Kacen, just my little way of saying Happy Father's Day to Ky.

When Kacen was a baby Ky held him every chance he got. Even after long days of studying.



 And taught him from a young age to love the adventure in life. (oh by the way Friday he totally let Kace ride with him on his long board down the hill, he is definitely the cool dad)

Coconut Cream Pie

Last week I had left over egg yolks (from using the whites for chicken nuggets), cream of coconut (from rice and smoothies) and whipped cream (from loaded pancakes). So what else would I make but Coconut Cream Pie.

 Crust:
1 1/4 C all-purpose flour
1/2 tsp. salt
1/3 C shortening
3 to 4 Tbsp cold water

In a mixing bowl stir together flour and salt. Cut in shortening til pieces are the size of small peas. Sprinkle in 1 Tbsp of water and toss push to side of bowl, repeat til all is moist. Form into a all. On a lightly floured surface flatten dough with hands. roll dough from center edge, forming a circle about 12 inches in diameter. Wrap pastry around rolling pin. Unroll onto a 9-inch pie plate. Ease pastry into pie plate, being careful not to stretch pastry. Trim to 1/2 inch beyond edge of pie plate; then cut off excess and make fluted, rope-shape or scalloped edge. Prick the pastry with fork. Bake in 450 degree oven for 10-12 minutes or till golden.

 Cream Filling:
3/4 C. Sugar
1/4 C. Cornstarch
1/4 tsp. Salt
3 C. Milk
1/4 C. Cream of Coconut
4 Egg yolks
3 Tbsp butter or margarine
1 1/2 tsp. vanilla
1 and 1/3 C. flaked coconut separated

For filling, in a medium saucepan combine sugar, flour or cornstarch, and salt; gradually stir in milk. Cook and stir over medium heat till thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from heat. Separate egg yolks from whites; store whites for later use. Beat egg yolks slightly. Gradually stir 1 cup of the hot mixture into yolks. Return egg mixture to saucepan; bring to a gentle boil. Cook and stir 2 minutes more. Remove from heat. Stir in butter, vanilla and 1 C. coconut. Pour hot filling into baked crust. Cover and chill to store.

Take the 1/3 C. coconut left and heat slowly in a dry pan over medium heat, stirring frequently until the coconut is golden brown.

To serve put whipped cream and toasted coconut  on top of the pie. Enjoy.

MasterChef 2

Everyone thank you so much for your kind comments about my participation in the show. You are all so nice. If you missed the premier check it out on FOX (click FOX to go there) watch episode one, you will see me here and there, wearing a yellow shirt, and then I see the judges about 20 minutes in. I am working on making a video with my clips and will post it when I get there.
